    There have been quite a few things on our minds over the past few weeks. We are now both employed and are getting into the swing of the day-to-day rhythm that comes with a daily schedule. Of course, we’re trying to break the rhythm as we can and keep things interesting. There is never a lack of fun things to do or try or be part of around here! A few random things of particular interest…

    • We continue to work on building our photography portfolio in anticipation of the kick-off of an actual business. We are learning lots and have had a few more sessions to add to our experience. This weekend we realized that between August and September we have at least one photo session every week. Stay tuned for the official launch and more information!

    • John’s birthday was this past week and we celebrated by going to a concert at the Washington Park Zoo. What a great concert venue! Amos Lee gave a great show and we had a super relaxing time lounging on the lawn. We had a “we love Portland” moment as waves of light rain came through during the evening and no one thought twice–umbrellas, rain gear, and a-little-rain-won’t-kill-me attitudes came out in full force and everyone had a great time despite the damp weather.

    • Canning class! Maybe it seems odd, but Erin and our sister-in-law, Linsey, took a free pressure canning class offered by OSU Extension and came away inspired. They canned 45 pounds of peaches and are scheming to do tomatoes next.

    • The mighty Air Force Thunderbirds were on display at the 2009 Oregon International Airshow, held at the Hillsboro Airport. We cruised over with Pete and Linsey, who knew the primo spot to watch without paying the $20 to get into the show. The four of us joined around 100 others in a field where we saw, heard, and felt the power of those F-16 jets. They were screaming fast and so cool to watch.

    • On a more serious side, we are continuing to pursue our concern for women and children worldwide who are exploited by the sex trafficking industry. We are looking ahead to an advocacy training session with IJM taking place in a couple of weeks. New legislation is coming before Congress that will work toward the elimination of this devastating exploitation of the most vulnerable individuals. We also watched Taken, a Hollywood movie with Liam Neeson that delves into one aspect of the industry and in which Liam kicks some serious bootie (we highly recommend it). Dude, I wish I could kick butt like that.

    For those of you who were there, it might be hard to believe that five years have passed, but it’s true–we celebrated five years of marriage and kicked off the sixth this weekend. As we hiked into Jefferson Park in the Willamette National Forest, at the foot of Mt. Jefferson, we realized our first, third, and now, fifth anniversaries have been spent in the woods. Each time a different place–Mt. Hood, Olympic National Park, and now Mt. Jefferson–but every spot a beautiful, relaxing, and energizing escape.

    Of course, these days we don’t go anywhere without our camera and the back country is no exception.

    img_1859Yes, we are biased, but Portland really is one of the greatest cities around (#7 in the country according to Outside magazine this month). We missed this city in our time away, but began to make up for lost time this weekend as we had two events downtown. The first being our friend, Martha’s, 30th birthday celebration which included bocce  at the North Park Blocks, sandwiches as big as your head at Kenny & Zuke’s, an americano at Stumptown Coffee, photos at the Ace Hotel photo booth, and hazelnut gelato at Mio Gelato. All of which we would highly recommend. Great birthday fun!

    The second event of the weekend was the 2009 Providence Bridge Pedal which gave us the opportunity to ride across seven of Portland’s 12 bridges (Hawthorne, Ross Island, Marquam, Burnside, Broadway, Fremont, and St. John’s). Favorites included the Marquam (riding on the interstate was a rush!), the Fremont, and the Hawthorne. We also enjoyed cruising a brief section of I-405 and getting up to speeds between 30-36 mph down N Willamette Ave. The 24 mile ride gave us a fun look at Portland neighborhoods we’d never seen and a beautiful view of the city as we crossed each bridge.

    We couldn’t resist sharing more photos from our beach time last week. The four day holiday was spent with family doing some of the things we do best–hanging out, eating good food, taking photographs of each other, and playing on the beach. Of course, most of the time our eyes and our cameras were focused on Oscar, our precious nephew, to whom we did not at all mind giving our attention. It was a fun and relaxing time and we look forward to the next time!

    We had grand plans while traveling to blog “how to” instructional posts, but somehow after our first, It’s a Tradtion, it never ended up happening. How to… Use a Squatty Potty, Negotiate a Fair Price Using Sign Language, Get Across the Zimbabwean Border Without Paying a Bribe, and Cross the Street in SE Asia were potential blog posts that never came to be. We’re happy to discuss those how to’s with anyone who is interested, though!

    This past week we had the chance to spend time at the Oregon Coast with the Macy family (Mauri, Sherry, Rachel, JohnW, Oscar, Pete, Linsey, and us). We volunteered to be responsible for one dinner and decided we’d turn it into and opportunity to give a lesson on how to make one of our favorite Thai dishes, Massaman Curry. It’s incredibly simple and we wanted to share it with anyone else who might want to try their hand at Thai cooking…

    Items you will need for a 2-3 person serving:

    • 1 tsp sugar
    • 2 tsp fish sauce*
    • 1 can coconut milk*
    • 1 tablespoon massman curry paste**
    • 2-3 potatoes cubed and boiled potatoes
    • Any other vegetable (uncooked) you want to add (onions, zucchini, etc)
    • 1 small piece of chicken or beef
    • Steamed rice
    • Wok or deep frying pan

    *Should be able to get these at any grocery store.
    **Probably best to buy at an Asian market.

    Step 1: Prepare chicken and vege. And get wok/pan heating on high.

    Step 2: Heat about 3/4 of a can of coconut milk for 1 minute.
    Add more coconut milk if you like your massman more saucy.

    Step 3: Add 1 large tablespoon of curry paste. Stir until mixed, about 1 minute. Taste and see if the flavor is to your liking. Add more coconut milk to lessen the spice, add more curry to increase it.

    Step 4: Add chicken and cook until done. Usually 3-5 minutes. Keep high heat.

    Step 5: Add vege, sugar, fish sauce. Boil until thick and vege is soft.

    Step 6: Serve over steamed rice. Bon Appetit!
